SayRay puts the words on the screen while people talk: tap Record, watch the transcription arrive live in big type, and the note is saved when you stop.

Why did SayRay download something on first launch, and does it need internet? It downloads Apple's speech recognition model for your language, once. After that, transcription works offline. Pick another language in Settings and that one downloads too.
Why don't I see grammar cleanup? Cleanup runs on the phone with Apple Intelligence, so it appears only on iPhones that support Apple Intelligence and have it turned on.
How does iCloud sync work, and how do I turn it off? Notes sync through your own private iCloud under your Apple Account; I cannot see them. To turn it off, open iOS Settings, your Apple Account, then iCloud, and switch off SayRay, or sign out of iCloud. Notes then stay on the phone.
How do I make the text bigger? Tap the Size button to cycle through 1x, 2x, and 3x, or pinch the transcript. A saved note has the same Text size menu.
How do I delete a note? Open Notes, swipe left on the note, and tap Delete. It is removed from the phone and from iCloud.
